Hearty Cheddar Garlic Herb Potato Soup Recipe

A rich and creamy potato soup infused with cheddar cheese, garlic, and herbs, topped with crispy turkey bacon.

Ingredients

  • 4 cups diced potatoes
  • 1 cup shredded sharp cheddar cheese
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic; sauté until softened.
  2. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Use an immersion blender to puree the soup until smooth, or blend in batches in a regular blender.
  4. Stir in the heavy cream, shredded cheese, thyme, parsley, salt, and pepper. Cook until cheese is melted and the soup is heated through.
  5. In a separate pan, cook the turkey bacon until crispy, then crumble and sprinkle on top of the soup before serving.

Notes

  • For added flavor, you can sauté the turkey bacon with the onions.
  • This soup can also be made vegetarian by using vegetable broth and omitting the turkey bacon.
