A hearty Hamburger Soup that incorporates turkey bacon for a delicious twist on a classic comfort food.

  • 1 pound ground beef
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups green beans, chopped
  • 3 potatoes, diced

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add ground beef and cook until browned.
  3. Add onion, carrots, celery, and garlic; sauté until vegetables are tender.
  4. Stir in diced tomatoes, beef broth, Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add green beans and potatoes; cook until tender.
  7. Crumble turkey bacon on top before serving.

Notes

  • Serve with crusty bread for a complete meal.
  • This soup freezes well for up to 3 months.
