Gluten Free Lasagna Soup

A warm and comforting lasagna soup made gluten-free!

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces gluten-free lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the ground beef, onion, and garlic, cooking until browned.
  3. Stir in the crushed tomatoes, broth, basil, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add the broken lasagna noodles and simmer for an additional 10-12 minutes until noodles are tender.
  6. Remove from heat and stir in the ricotta cheese and half of the mozzarella.
  7. Serve hot, topped with remaining mozzarella, Parmesan, and parsley.

Notes

  • For a vegetarian option, substitute ground beef with lentils or mushrooms.
  • Feel free to add vegetables like spinach or zucchini for more nutrients.
