  • 8 ounces gluten-free lasagna noodles
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. Add olive oil, onion, and garlic to the pot and sauté until softened.
  3. Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Add gluten-free lasagna noodles and cook until tender.
  5. Stir in ricotta cheese and crumbled bacon before serving. Top with mozzarella and Parmesan cheese.

Notes

  • For added flavor, try adding chopped spinach or mushrooms.
  • This soup can be made ahead of time and stored in the refrigerator.
