Gardener’s Pie

A hearty and flavorful Gardener’s Pie that brings comfort to your table.

Ingredients

  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups mashed potatoes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until translucent.
  3. Add the mixed vegetables and cook for another 5 minutes.
  4. Pour in the vegetable broth, thyme, salt, and black pepper. Allow the mixture to simmer for about 10 minutes.
  5. Transfer the vegetable mixture to a baking dish and top with mashed potatoes.
  6. Bake for 25-30 minutes until the top is golden brown.
  7. Let it cool for a few minutes before serving.
