A delicious and hearty casserole featuring tender chicken, orzo, and the rich flavors of French onion soup.

  • 1 pound orzo pasta
  • 2 cups cooked chicken, shredded
  • 4 ounces turkey bacon, diced
  • 1 large onion, sliced
  • 2 cups beef broth
  • 1 cup sour cream
  • 2 cups shredded cheese (e.g., Swiss or Gruyère)
  • 1 tablespoon garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the turkey bacon until crispy. Remove and set aside.
  3. Add the sliced onions into the skillet and sauté until caramelized.
  4. In a large mixing bowl, combine orzo, shredded chicken, bacon, caramelized onions, beef broth, sour cream, half of the cheese, garlic, thyme, salt, and pepper.
  5. Transfer the mixture to a large baking dish and top with the remaining cheese.
  6. Bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  7. Let cool for a few minutes before serving.

  • For a vegetarian option, omit the turkey bacon and use vegetable broth.
