Elote Pasta Salad

A refreshing take on the classic flavors of elote, this pasta salad combines fresh ingredients with a creamy dressing.

Ingredients

  • 8 ounces pasta
  • 2 cups corn
  • 1 red bell pepper, diced
  • 1 jalapeño, finely chopped
  • 1/2 cup red onion, chopped
  • 1 cup cilantro, chopped
  • 1 lime, juiced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine corn, red bell pepper, jalapeño, red onion, and cilantro.
  3. Add the cooled pasta to the vegetable mixture.
  4. In a separate bowl, mix together lime juice, mayonnaise, sour cream, chili powder, garlic powder, salt, and pepper.
  5. Pour the dressing over the pasta and vegetables, and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This salad can be made a day in advance for enhanced flavor.
  • Adjust the spice level by adding more or less jalapeño.
