Egg Pasta Salad

Enjoy a delightful twist on classic pasta salad with the addition of turkey bacon and egg, making it a satisfying choice for lunch or a side dish.

  • 8 ounces rotini pasta
  • 4 strips turkey bacon
  • 2 hard-boiled eggs, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and cool.
  2. In a skillet, cook the turkey bacon until crispy. Remove and chop once cooled.
  3. In a large bowl, combine cooked pasta, chopped turkey bacon, hard-boiled eggs, cherry tomatoes, and red onion.
  4. In a separate bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper.
  5. Pour the dressing over the pasta mixture and toss until well coated.
  6. Chill the salad for at least 30 minutes before serving.

Notes

  • You can substitute regular bacon for turkey bacon if desired.
