  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup pumpkin puree
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add the sugar and continue to beat until creamy.
  4. Add the eggs one at a time, beating well after each addition. Then stir in the vanilla extract, pumpkin puree, cinnamon, nutmeg, and salt until the mixture is smooth.
  5. Pour half of the cheesecake mixture over the crust. Drizzle with half of the remaining pumpkin mixture and swirl with a knife. Repeat with the remaining mixture.
  6. Bake for 55-60 minutes or until the center is set. Let it cool, then refrigerate for at least 4 hours before serving.
