- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 2 packages (8 ounces each) cream cheese, softened
- 1 cup pumpkin puree
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- Preheat your oven to 325°F (160°C).
- In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese until smooth. Gradually add the sugar and continue to beat until creamy.
- Add the eggs one at a time, beating well after each addition. Then stir in the vanilla extract, pumpkin puree, cinnamon, nutmeg, and salt until the mixture is smooth.
- Pour half of the cheesecake mixture over the crust. Drizzle with half of the remaining pumpkin mixture and swirl with a knife. Repeat with the remaining mixture.
- Bake for 55-60 minutes or until the center is set. Let it cool, then refrigerate for at least 4 hours before serving.
