  • 1 cup milk
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 cup mixed berries
  • 4 slices turkey bacon

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a blender, combine the flour, milk, eggs, vanilla, and salt. Blend until smooth.
  3. Melt the butter in a cast-iron skillet in the preheated oven.
  4. Pour the batter into the skillet and bake for 20 minutes or until puffed and golden.
  5. Meanwhile, cook the turkey bacon in a skillet until crispy.
  6. Remove the pancakes from the oven, top with crispy turkey bacon and berries.
  7. Serve immediately and enjoy!
