- 2 large sweet potatoes
- 4 slices turkey bacon
- 1 apple, diced
- 1 tablespoon olive oil
- 1 teaspoon cinnamon
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Poke holes in the sweet potatoes and bake for 45 minutes until tender.
- While the potatoes are baking, cook the turkey bacon in a skillet until crispy, then chop.
- In a bowl, mix the diced apple, chopped turkey bacon, olive oil, cinnamon, salt, and pepper.
- Once the potatoes are done, cut them open and fluff the insides with a fork.
- Spoon the apple and bacon mixture into the sweet potatoes and serve.
