A delightful fall-inspired sweet potato casserole featuring the richness of turkey bacon, perfect for holiday gatherings.

  • 2 pounds sweet potatoes
  • 6 slices turkey bacon
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1/2 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and boil sweet potatoes until tender, then mash them in a bowl.
  3. Cook turkey bacon until crispy, then crumble it and add to the mashed sweet potatoes.
  4. Add brown sugar, milk, cinnamon, nutmeg, and vanilla extract to the potato mixture and blend until smooth.
  5. Transfer the mixture to a greased baking dish.
  6. Top with mini marshmallows and bake for 25-30 minutes until the marshmallows are golden brown.
  7. Let it cool for a few minutes before serving.
