- 2 cups cooked shredded chicken
- 1 cup enchilada sauce
- 1 cup shredded cheese
- 8 flour tortillas
- 1/2 cup diced onions
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
- Add shredded chicken, garlic powder, cumin, and half of the enchilada sauce. Stir to combine.
- In each tortilla, place a portion of the chicken mixture and a sprinkle of cheese, then roll up and place seam-side down in a baking dish.
- Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
