A simple and delicious recipe for chicken enchiladas that is sure to impress your family and friends.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1/2 cup diced onions
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
  3. Add shredded chicken, garlic powder, cumin, and half of the enchilada sauce. Stir to combine.
  4. In each tortilla, place a portion of the chicken mixture and a sprinkle of cheese, then roll up and place seam-side down in a baking dish.
  5. Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  6. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly.
  7. Serve warm.

Notes

  • You can substitute rotisserie chicken for quicker preparation.
  • Add black beans or corn for extra flavor and texture.
