  • 1 cup dark chocolate chips
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 4 slices turkey bacon, cooked and crumbled

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine all-purpose flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together buttermilk, vegetable oil, and egg.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the dark chocolate chips and crumbled turkey bacon.
  6. Fill each muffin liner about 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

  • Make sure to not overmix the batter for fluffy muffins.
  • Experiment with different types of chocolate if desired.
