Crockpot Vegetarian Tortilla Soup

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups tortilla chips
  • 1 cup shredded cheese

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until translucent.
  2. Transfer the sautéed vegetables to a crockpot.
  3. Add bell pepper, black beans, corn, diced tomatoes, vegetable broth, chili powder, cumin, salt, and pepper to the crockpot. Stir well.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. Serve the soup hot, garnished with tortilla chips and shredded cheese on top.

Notes

  • Add avocado and fresh cilantro for extra flavor.
  • Adjust the spices according to your taste.
