Crockpot Loaded Baked Potato Soup

A creamy and hearty soup made with tender potatoes, turkey bacon, and a blend of flavors.

  • 4 large russet potatoes
  • 1 cup turkey bacon, cooked and crumbled
  • 1 medium onion, diced
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup green onions, chopped

Instructions

  1. Peel and dice the potatoes.
  2. In a crockpot, combine the potatoes, turkey bacon, onion, and chicken broth.
  3. Cook on low for 6-8 hours or until the potatoes are tender.
  4. Once the potatoes are cooked, mash some of them for thicker consistency.
  5. Stir in the cheese, sour cream, garlic powder, pepper, and salt. Cook for an additional 30 minutes.
  6. Serve hot, garnished with chopped green onions.

Notes

  • For a richer flavor, use half-and-half instead of sour cream.
  • Add more cheese for extra creaminess.
