- 4 large russet potatoes
- 1 cup turkey bacon, cooked and crumbled
- 1 medium onion, diced
- 4 cups chicken broth
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup green onions, chopped
- Peel and dice the potatoes.
- In a crockpot, combine the potatoes, turkey bacon, onion, and chicken broth.
- Cook on low for 6-8 hours or until the potatoes are tender.
- Once the potatoes are cooked, mash some of them for thicker consistency.
- Stir in the cheese, sour cream, garlic powder, pepper, and salt. Cook for an additional 30 minutes.
- Serve hot, garnished with chopped green onions.
Notes
