A delicious and comforting dish featuring creamy white beans, turkey bacon, and a medley of herbs.

  • 2 cups creamy white beans
  • 4 strips turkey bacon
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup vegetable broth
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pan, cook the turkey bacon until crispy. Remove and chop into pieces.
  2. In the same pan, add olive oil and sauté the onion until translucent.
  3. Add garlic and herbs, cooking for another minute.
  4. Stir in the creamy white beans and vegetable broth, simmer for about 10 minutes.
  5. Season with salt and pepper, and return the bacon to the pan. Serve hot.

  • For a vegetarian version, omit the bacon or substitute with smoked tofu.
