A delicious and creamy dish made with white beans, turkey bacon, and fresh herbs.

  • 2 cups cooked white beans
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • ¼ cup fresh parsley, chopped

Instructions

  1. In a large pan, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pan, add olive oil and sauté onion and garlic until translucent.
  3. Add the white beans, vegetable broth, thyme, and crumbled turkey bacon.
  4. Simmer for 15 minutes, allowing flavors to meld.
  5. Season with salt and pepper, and stir in fresh parsley before serving.

Notes

  • For a vegan version, substitute turkey bacon with a plant-based alternative.
  • This dish can be served hot or cold as a salad.
