  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 4 cups vegetable broth
  • 1 pound gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and sauté until translucent.
  2. Add the garlic, carrots, and celery, and cook for another 5 minutes.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the gnocchi and cook according to package instructions.
  5. Stir in the spinach and heavy cream, followed by thyme, and season with salt and pepper.
