- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 ribs celery, diced
- 4 cups vegetable broth
- 1 pound gnocchi
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
