Creamy Vegetable Soup

Ingredients

  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 cup diced potatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, and sauté until translucent.
  3. Stir in mixed vegetables and potatoes, cooking for about 5 minutes.
  4. Add vegetable broth and season with salt, pepper, and thyme.
  5. Bring the mixture to a boil, then reduce heat and simmer until vegetables are tender.
  6. Blend the soup until smooth using an immersion blender.
  7. Stir in the heavy cream and heat through before serving.

Notes

  • For extra flavor, add a splash of lemon juice before serving.
