Creamy Tuscan Ravioli Soup

A delicious blend of creamy broth, turkey bacon, and fresh spinach combined with tender ravioli for a comforting soup.

Ingredients

  • 8 ounces ravioli
  • 4 strips turkey bacon
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crisp. Remove and chop.
  2. In the same pot, add olive oil and sauté onion until translucent.
  3. Add garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the ravioli and cook according to package instructions.
  6. Stir in the heavy cream, chopped turkey bacon, spinach, and Italian seasoning. Simmer for a few minutes.
  7. Season with salt and pepper to taste.

Notes

  • For a vegetarian version, substitute turkey bacon with mushrooms.
