Creamy Tomato White Bean Stew

  • 1 can white beans
  • 4 strips turkey bacon
  • 1 cup diced tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and crumble; set aside.
  2. Add chopped onion and garlic to the pot; sauté until translucent.
  3. Stir in diced tomatoes, vegetable broth, white beans, thyme, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in heavy cream and cook for an additional 5 minutes.
  6. Top with crumbled turkey bacon before serving.
