8 ounces rotini pasta
1 cup corn, fresh or frozen
4 slices turkey bacon, cooked and crumbled
1 cup cherry tomatoes, halved
1/2 cup red onion, diced
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon lime juice
1 teaspoon chili powder
1/4 cup cilantro, chopped
Instructions
Cook the rotini pasta according to package instructions. Drain and set aside.
If using fresh corn, grill for a few minutes until charred, then cut the kernels off. If using frozen corn, thaw and drain.
In a large bowl, combine cooked pasta, corn, turkey bacon, cherry tomatoes, and red onion.
In a separate bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, and cilantro. Pour the dressing over the pasta mixture and stir until well combined.
Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
Feel free to add avocado or jalapeños for extra flavor.
