- 1 head garlic
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- Salt to taste
- Pepper to taste
- Preheat the oven to 400°F (200°C).
- Wrap the garlic head in foil and roast for 30-35 minutes until soft.
- In a saucepan, heat olive oil over medium heat.
- Once the garlic is cool, squeeze out the roasted cloves into the saucepan.
- Add heavy cream, Parmesan cheese, lemon juice, and lemon zest. Stir until combined.
- Season with salt and pepper to taste.
- Serve over cooked pasta of your choice.
