Creamy Roast Garlic and Lemon Pasta Sauce

A creamy and tangy pasta sauce made with roasted garlic and fresh lemon.

Ingredients

  • 1 head garlic
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the garlic head in foil and roast for 30-35 minutes until soft.
  3. In a saucepan, heat olive oil over medium heat.
  4. Once the garlic is cool, squeeze out the roasted cloves into the saucepan.
  5. Add heavy cream, Parmesan cheese, lemon juice, and lemon zest. Stir until combined.
  6. Season with salt and pepper to taste.
  7. Serve over cooked pasta of your choice.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • Add spinach or peas for extra flavor and nutrition.
