- 4 large russet potatoes
- 6 slices turkey bacon
- 1 medium onion
- 3 cloves garlic
- 4 cups chicken broth
- 2 cups heavy cream
- 1 teaspoon thyme
- Salt to taste
- Black pepper to taste
- Peel and dice the potatoes into small cubes.
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop into bits.
