  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Peel and dice the potatoes into small cubes.
  2. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop into bits.
  3. In the same pot, sauté the onion and garlic until translucent.
  4. Add the potatoes and chicken broth to the pot. Bring to a boil and then reduce to a simmer.
  5. Cook until potatoes are tender, about 15-20 minutes.
  6. Stir in the heavy cream, thyme, salt, and pepper. Simmer for another 5 minutes.
  7. Blend the soup for a creamy texture, then top with cooked bacon before serving.

  • For a thicker soup, blend more of the potatoes.
