Creamy Loaded Baked Potato Soup

  • 4 large potatoes, peeled and diced
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon garlic, minced
  • 1 onion, chopped
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ cup cheddar cheese, shredded
  • ¼ cup green onions, chopped

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  2. In the same pot, sauté the onions and garlic until translucent.
  3. Add the diced potatoes and chicken ham to the pot, then pour in the chicken broth.
  4. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Using an immersion blender, blend the soup until smooth, leaving some chunks for texture.
  7. Serve hot, garnished with the crispy turkey bacon, shredded cheddar cheese, and chopped green onions.
