Creamy Lasagna Soup

A rich and hearty soup that combines the flavors of lasagna with the comfort of a warm bowl, featuring turkey bacon and chicken ham for a delicious twist.

  • 8 ounces lasagna noodles
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same pot, add the onion and garlic, cooking until softened.
  3. Stir in the chicken ham and cook for another 2 minutes.
  4. Add chicken broth, crushed tomatoes, lasagna noodles, and Italian seasoning. Bring to a boil.
  5. Reduce heat and simmer until noodles are tender.
  6. Stir in the heavy cream, ricotta, mozzarella, and Parmesan cheese until melted.
  7. Season with salt and pepper, and garnish with chopped turkey bacon before serving.

Notes

  • For added flavor, consider using homemade chicken broth.
  • Feel free to substitute the turkey bacon with regular bacon if preferred.
