Ingredients

  • 2 cups cooked wild rice
  • 1 pound boneless, skinless chicken breast
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons dried thyme
  • salt and pepper, to taste

Instructions

  1. Place the chicken breast in the bottom of the crockpot.
  2. Add the chicken broth, carrots, celery, onion, and garlic.
  3. Stir in thyme, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or until the chicken is cooked through.
  5. Remove the chicken and shred it with two forks.
  6. Return the shredded chicken to the crockpot.
  7. Stir in the heavy cream and cooked wild rice.
  8. Cook for an additional 30 minutes until heated through.

  • Use rotisserie chicken for an even quicker recipe.
