  • 8 ounces turkey bacon
  • 4 cups fresh spinach
  • 12 ounces pasta of choice
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Start by peeling and cubing the butternut squash. Cook in boiling water until tender.
  2. Meanwhile, cook the turkey bacon in a skillet until crispy, then set aside.
  3. In the same skillet, sauté the fresh spinach until wilted.
  4. Cook the pasta according to package instructions, then drain.
  5. Blend the butternut squash with cream, garlic powder, salt, pepper, and nutmeg until smooth.
  6. Add the pasta to the skillet with spinach, then pour the butternut squash sauce over it and mix well.
  7. Finally, crumble the crispy turkey bacon on top before serving.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Add grated cheese for extra flavor if desired.
