- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 2 cups butternut squash, peeled and diced
- 2 cups spinach, fresh
- 1 cup heavy cream
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup grated parmesan cheese
- In a large pot, cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sausage, cooking until browned.
- Add butternut squash to the skillet and cook until tender.
- Stir in the heavy cream, garlic powder, salt, pepper, and nutmeg, and bring to a simmer.
- Mix in the spinach and pasta, stirring until the spinach wilts and everything is combined.
- Sprinkle parmesan cheese on top before serving.
