This creamy butternut squash pasta combines indulgent sausage and fresh spinach for a delicious and comforting meal.

  • 8 ounces pasta of your choice
  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 2 cups butternut squash, peeled and diced
  • 2 cups spinach, fresh
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese

Instructions

  1. In a large pot, cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sausage, cooking until browned.
  3. Add butternut squash to the skillet and cook until tender.
  4. Stir in the heavy cream, garlic powder, salt, pepper, and nutmeg, and bring to a simmer.
  5. Mix in the spinach and pasta, stirring until the spinach wilts and everything is combined.
  6. Sprinkle parmesan cheese on top before serving.

Notes

  • This dish can be made in advance and reheated.
