Creamy Butternut Squash Pasta with Sausage and Spinach

A deliciously creamy pasta dish that combines butternut squash with savory sausage and fresh spinach for a satisfying meal.

  • 8 ounces pasta of your choice
  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon nutmeg
  • 1 pound Italian sausage, casings removed
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a baking sheet, toss butternut squash with olive oil, salt, pepper, garlic powder, and nutmeg. Roast for 25-30 minutes, until tender.
  3. Meanwhile, cook the pasta according to package instructions. Drain and set aside.
  4. In a skillet, cook Italian sausage over medium heat until browned and cooked through.
  5. Add spinach to the skillet and cook until wilted.
  6. In a blender, combine roasted butternut squash and heavy cream. Blend until smooth.
  7. Add the creamy mixture to the skillet with sausage and spinach. Stir in Parmesan cheese and cooked pasta. Mix well to combine.
  8. Serve hot, garnished with additional Parmesan if desired.

Notes

  • Feel free to substitute turkey sausage for a lighter option.
  • For added flavor, toss in some crushed red pepper flakes.
