Creamy Butternut Squash Pasta with Sausage and Spinach

A delightful dish featuring creamy butternut squash, savory sausage, and fresh spinach.

  • 1 pound butternut squash, peeled and diced
  • 8 ounces pasta of choice
  • 1 pound Italian sausage, casing removed
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the pasta according to package instructions; drain and set aside.
  2. In the same pot, heat olive oil over medium heat and add the sausage. Cook until browned.
  3. Add garlic and butternut squash, cooking until the squash is soft.
  4. Stir in the heavy cream, spinach, salt, and pepper; cook until the spinach wilts.
  5. Combine the cooked pasta with the sauce and mix well.
