- 1 pound butternut squash, peeled and diced
- 8 ounces pasta of choice
- 1 pound Italian sausage, casing removed
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the pasta according to package instructions; drain and set aside.
- In the same pot, heat olive oil over medium heat and add the sausage. Cook until browned.
- Add garlic and butternut squash, cooking until the squash is soft.
- Stir in the heavy cream, spinach, salt, and pepper; cook until the spinach wilts.
- Combine the cooked pasta with the sauce and mix well.
