Cream Of Mushroom Soup

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup chopped onion
  • 2 cups sliced mushrooms
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil and butter over medium heat.
  2. Add the onion and sauté until translucent.
  3. Stir in the mushrooms and garlic, cooking until the mushrooms are browned.
  4. Sprinkle flour over the vegetables and stir for 1-2 minutes.
  5. Pour in the vegetable broth while whisking to combine.
  6. Bring to a boil, then reduce heat and simmer for 15 minutes.
  7. Stir in the cream and thyme, and let simmer for an additional 5 minutes.
  8. Season with salt and pepper to taste.
  9. Serve hot.

Notes

  • For added richness, you can sprinkle freshly chopped parsley before serving.
