- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 cup chopped onion
- 2 cups sliced mushrooms
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
- In a large pot, heat the olive oil and butter over medium heat.
- Add the onion and sauté until translucent.
- Stir in the mushrooms and garlic, cooking until the mushrooms are browned.
- Sprinkle flour over the vegetables and stir for 1-2 minutes.
- Pour in the vegetable broth while whisking to combine.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in the cream and thyme, and let simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
