  • 1 whole chicken
  • 1 cup fresh cranberries
  • 2 tablespoons olive oil
  • 1 tablespoon rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 medium onion, quartered

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken by removing any giblets and pat dry.
  3. In a bowl, mix olive oil, garlic, rosemary, salt, and pepper.
  4. Rub this mixture all over the chicken.
  5. Stuff the cavity of the chicken with cranberries and onion.
  6. Place the chicken in a roasting pan and surround it with any remaining cranberries.
  7. Roast in the preheated oven for 1.5 hours or until the internal temperature reaches 165°F (75°C).
  8. Let it rest for 10 minutes before carving.
