- 1 cup white beans
- 1 cup mushrooms, sliced
- 4 slices turkey bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add onions and mushrooms to the pot, sautéing until soft.
- Stir in garlic and cook for another minute.
- Add the white beans, vegetable broth, thyme, and rosemary. Bring to a boil.
- Reduce heat and let simmer for 30 minutes.
