Comforting Wild Mushroom

A delicious risotto featuring wild mushrooms and turkey bacon for a comforting meal.

Ingredients

  • 1 cup Arborio rice
  • 4 cups chicken broth
  • 1 cup wild mushrooms, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 slices turkey bacon, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Add the onions and garlic, and sauté until translucent.
  3. Stir in the wild mushrooms and cook until softened.
  4. Add the Arborio rice and toast for 2 minutes.
  5. Pour in the chicken broth gradually, stirring frequently until absorbed.
  6. Once the rice is creamy and al dente, stir in the Parmesan cheese. Season with salt and pepper.
  7. Let sit for a few minutes before serving.

Notes

  • For added richness, substitute butter for olive oil.
