- 4 large russet potatoes
- 6 slices turkey bacon
- 1 cup cooked chicken ham, diced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- Preheat the oven to 400°F (200°C).
- Wash and scrub the russet potatoes, then pierce them with a fork.
- Rub the potatoes with olive oil, salt, and pepper.
- Bake the potatoes for about 45 minutes or until tender.
- While the potatoes are baking, cook the turkey bacon in a skillet over medium heat until crispy. Remove and crumble.
- Once the potatoes are done, slice them open and fluff the insides with a fork.
- Layer with chicken ham, cheese, sour cream, crumbled bacon, and green onions.
- Return to the oven for an additional 10 minutes to melt the cheese.
- Serve warm and enjoy!
