Comforting Loaded Baked Potato Soup

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup green onions, chopped
  • ½ teaspoon black pepper
  • Salt to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Add the diced potatoes and cover with chicken broth. Bring to a boil and cook until potatoes are tender.
  4. Stir in the heavy cream and half of the shredded cheddar cheese. Mix well until smooth.
  5. Season with salt and black pepper to taste.
  6. Serve hot, topped with remaining cheese, turkey bacon, and green onions.

Notes

  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
  • For a lighter version, substitute heavy cream with half-and-half.
