- 4 large russet potatoes
- 4 slices turkey bacon
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup chopped green onions
- Cook the turkey bacon in a large pot over medium heat until crispy. Remove and set aside.
- In the same pot, add onions and garlic, sauté until translucent.
- Add cubed potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Use an immersion blender to purée the soup until smooth.
- Stir in heavy cream, salt, pepper, and smoked paprika. Heat through.
- Serve topped with cheddar cheese, crumbled bacon, sour cream, and green onions.
