  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons balsamic vinegar

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the chuck roast with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
  4. Remove the roast and add sliced onions to the pot. Cook until onions are softened.
  5. Add garlic and cook for another minute.
  6. Return the roast to the pot and add beef broth, red wine, thyme, and balsamic vinegar.
  7. Cover the pot and transfer to the oven. Cook for 3 to 4 hours until meat is tender.
