  • 2 large eggs

  • ½ cup sour cream
  • 1 teaspoon baking powder

  • ½ teaspoon salt
  • ½ cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and sour cream.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. In another bowl, mix the brown sugar and cinnamon for the topping.
  8. Fill each muffin cup halfway with batter, sprinkle with the cinnamon sugar mixture, then top with the remaining batter.
  9. Bake for 18-20 minutes, or until a toothpick comes out clean.
  10. Let cool for a few minutes before transferring to a wire rack.
