- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter into the bananas.
- Add the baking soda and salt, mix thoroughly.
- Mix in the sugar, egg, and vanilla extract.
- Finally, mix in the flour until just incorporated.
- In a separate bowl, combine the cinnamon and brown sugar.
- Pour half of the batter into a greased loaf pan, sprinkle with half of the cinnamon sugar mixture, then add the rest of the batter and top with the remaining cinnamon mixture.
- Bake for 60-65 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
