  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the grated zucchini, sugar, and oil.
  3. Add eggs and vanilla, mixing until combined.
  4. In another bowl, combine the flour, cocoa powder, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Allow to cool before slicing.

Notes

  • You can substitute zucchini with yellow squash for a different flavor.
