Chile Relleno Soup Recipe

  • 2 large poblano peppers
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup corn kernels
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ cup shredded cheese
  • 1 tbsp olive oil

Instructions

  1. Char the poblano peppers over an open flame until blackened. Remove skin, seeds, and chop.
  2. In a large pot, heat olive oil and sauté onions and garlic until soft.
  3. Add chopped peppers, corn, diced tomatoes, broth, cumin, and chili powder. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Stir in cheese until melted and serve hot.
