Chicken Zucchini Pasta Skillet

A delicious and quick weeknight dinner featuring chicken and zucchini.

Ingredients

  • 2 cups zucchini, sliced
  • 1 pound chicken breast, diced
  • 8 ounces pasta of choice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the diced chicken, garlic powder, onion powder, salt, and pepper. Cook until chicken is browned and cooked through.
  3. Meanwhile, cook pasta according to package instructions. Drain and set aside.
  4. Add sliced zucchini to the skillet and sauté for about 3-4 minutes until tender.
  5. Mix in the cooked pasta and Parmesan cheese. Stir until well combined and cheese is melted.

Notes

  • This dish is best served fresh but can be stored in the refrigerator for up to 3 days.
  • For added flavor, consider adding fresh herbs.
