Chicken Zucchini Pasta

A delicious and easy chicken zucchini pasta recipe that’s perfect for weeknight dinners.

Ingredients

  • 2 cups zucchini, sliced
  • 1 pound chicken breast, cubed
  • 8 ounces pasta of your choice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the garlic. Sauté for about 1 minute.
  3. Add the chicken to the skillet and cook until browned and cooked through.
  4. Add the zucchini and Italian seasoning to the skillet. Sauté until the zucchini is tender.
  5. Combine the cooked pasta with the chicken and zucchini mixture. Stir until well combined.
  6. Season with salt and pepper to taste. Serve warm.

  • For a lighter version, use whole wheat pasta.
