- 2 cups cooked chicken, shredded
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 poblano peppers, roasted and diced
- 4 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 cup corn kernels
- 1 cup heavy cream
- Salt and pepper to taste
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and cook until translucent.
- Stir in the garlic and cook for an additional minute.
- Add the roasted poblano peppers, cooked chicken, chicken broth, cumin, and paprika.
- Bring to a simmer and cook for 20 minutes.
- Stir in the corn and heavy cream, simmer for another 5 minutes.
- Season with salt and pepper to taste. Serve warm.
