  • 2 tablespoons vegetable oil
  • 4 ounces turkey bacon, chopped
  • 2 eggs, beaten
  • 1 cup bean sprouts
  • 3 green onions, sliced
  • ¼ cup peanuts, crushed
  • 3 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat vegetable oil over medium heat. Add chopped turkey bacon and cook until crispy.
  3. Push the turkey bacon to one side and add the beaten eggs to the pan, scrambling until fully cooked.
  4. Incorporate the rice noodles into the skillet, followed by the bean sprouts, green onions, and crushed peanuts.
  5. In a small bowl, mix soy sauce, fish sauce, lime juice, and sugar. Pour this sauce over the noodle mixture and stir well to combine.
  6. Cook for an additional 2–3 minutes, until everything is heated through. Serve hot, garnished with extra peanuts if desired.

Notes

  • For a vegetarian version, you can omit the turkey bacon.
  • Add your favorite vegetables for more variety.
