Chicken Burrito Casserole

Turn your favorite burritos into a simple casserole with this Chicken Burrito Casserole recipe, featuring the deliciousness of turkey bacon.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup turkey bacon, cooked and crumbled
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1 tablespoon taco seasoning
  • 8 tortillas, cut into strips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chicken, turkey bacon, black beans, corn, salsa, cheese, and taco seasoning.
  3. Layer half of the tortilla strips in the bottom of a baking dish.
  4. Spread half of the chicken mixture over the tortillas.
  5. Layer the remaining tortilla strips on top, followed by the rest of the chicken mixture.
  6. Sprinkle additional cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.

Notes

  • For a spicier dish, use a hot salsa and add jalapeños.
  • You can substitute ground turkey or beef for shredded chicken if preferred.
