Cheesy Pumpkin Ricotta Pasta Bake

A creamy and cheesy baked pasta dish that combines the rich flavors of pumpkin and ricotta, perfect for cozy nights.

  • 12 ounces penne pasta
  • 1 cup ricotta cheese
  • 1 cup pumpkin puree
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  3. In a large bowl, combine the ricotta cheese, pumpkin puree, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well.
  4. Fold in the cooked pasta and half of the mozzarella cheese.
  5. Transfer the mixture to a greased baking dish and top with the remaining mozzarella and Parmesan cheese.
  6. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  7. Let cool for a few minutes before serving.
