- 12 ounces penne pasta
- 1 cup ricotta cheese
- 1 cup pumpkin puree
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large bowl, combine the ricotta cheese, pumpkin puree, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well.
- Fold in the cooked pasta and half of the mozzarella cheese.
- Transfer the mixture to a greased baking dish and top with the remaining mozzarella and Parmesan cheese.
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
